HC3S is Hampshire County Council’s in house catering service. As a Mobile Cook Supervisor you’ll be required to travel to various primary schools in the area to provide cover as required. Often you’ll be contacted in the morning and advised which school you are required to attend that day. It is essential that you have your own transport insured for business use and you must be able to fulfil the travel requirements of the role.


HC3S is Hampshire County Council’s in house catering service. Working in a fast paced busy primary school kitchen, leading a team of Catering Assistants to provide an effective catering service to primary school pupils, you’ll prepare, cook, serve and pack (where applicable) the required amount of meals and serve them to the school at the correct time. You’ll also be required to setup/clear the school hall of tables and chairs on a daily basis and carry out cleaning duties. Experience of working in a relevant catering environment is essential and you must be physically able to lift tables and chairs and kitchen equipment.

Job Purpose:


To lead a team of Catering Assistants in undertaking the provision of a cost effective catering service to unit.  To prepare, cook, serve and pack (where required) the required amount of meals and to deliver to customer at the correct time.   In addition help prepare and dismantle dining room areas and carry out cleaning duties.

Role Responsibilities:


Food preparation and cooking of meals:  Prepare the required number of meals following specified menu/special dietary requirements.  Measure cost per meal and make adjustments as directed by District Manager.


Setting up and clearing away of hall:  Ensure tables, chairs and water jugs for dinner period for the whole school eg: sandwich children as well.  At end of service, clear furniture and sweep hall ready for immediate school use.


Serving and customer liaison:  Serve food following portion control guidelines and special dietary requirements.  Receive customer feedback and communicate with unit staff to ensure accuracy of information as directed by the District Manager.  Handle cash where necessary.  Apply flexible approach to meet customer needs in special schools.


Kitchen cleaning  rota and general washing up:  Ensure manual washing up of all eating utensils and equipment occurs, sterilising where required, following set guidelines.  Ensure implementation of cleaning duties following daily and weekly rotas to ensure health and safety and hygiene standards are maintained.


Administration and financial/stock control:  Complete food cost and labour records, timesheets and general employment paperwork, health and safety returns and the annual self monitoring of unit. Ensure efficient stock control of foods, cleaning materials and disposables, following established procedures referring to District Manager with any problems or issues.


Effective use of resources and people management:   Maximise efficient use of all resources – people, equipment, food and cleaning materials.  Assist the District Manager in the induction and development of staff.  Develop and maintain team work and morale to ensure efficient operation of unit. As Team Leader, ensure that any training requirements are passed on to the District Manager for action.


Corporate and statutory initiatives – equalities / health and safety / e-government/ sustainability:  Ensure adherence to health and safety, food safety and hygiene procedures.

Role Requirements:


Essential knowledge skills and experience:

Experience of working in a relevant catering environment.

Ability to use a calculator and carry out simple calculations

Physically able to lift service and kitchen equipment

Working Conditions:

Chairs are stored in stacks of 8 and moved to dining room/storage area.

Tables are moved to dining room and erected where appropriate.

Frequent bending and lifting

Washing up. Industrial height low sinks, slip hazards.

Exposure to noise levels during cooking/service (e.g. Mechanical extraction). 

Exposure to heat through ovens/deep fat fryers/hot cupboards.

Exposure to chemicals with irritant classification.

Exposure to food products which may be irritants (tomatoes, potatoes, onions, garlic, fruits, lettuce)

Use of knives

Lone working early morning (for unit supervisor / manager posts).

Work can be at a fast pace

Temperature variants – kitchens can be hot in summer and cold in winter
