Are you a passionate and successful Catering Manager looking for a new challenge? Then we have an exciting opportunity for you. This is a fantastic role to work at Royal Victoria Country Park and build on your experience, taking charge of your own restaurant and team of catering staff.
In a prime location, Royal Victoria Country Park is embarking on a refurbishment of its restaurant making it the perfect place to enjoy a cup of coffee, evening meal or light lunch in a relaxed atmosphere.

With previous hospitality experience you will have an experience of both kitchen and front of house and large scale events including weddings.  You must have a good understanding of budgeting and financial management, rotas, ordering, record keeping, stock control and the ability to identify and implement service improvements.

You will have a key eye for detail and immaculate personal presentation. You will be highly organised and have excellent leadership and communication skills with a willingness to be hands on.
You will have the ability to cope in a busy environment, work well under pressure, and deal calmly with unexpected situations.   You will be enthusiastic, self-motivating and demonstrate a passion for training and developing people.

Job Purpose:

To lead and direct catering operations, ensuring a high-quality catering service which meets the needs of the site.

 Ensure the efficient and profitable business performance of the catering service and the optimal utilization of staff and resources.

 To plan and implement a growth strategy, including the development of new markets, maximizing sales opportunities to meet agreed income targets.

Role Requirements:

• Five years’ experience of working in a relevant hospitality environment
• Three years’ experience food and beverage management and managing a team
• Catering qualification e.g. HCIMA/HND/NEBSS/C and G 706/NVQ Food preparation and Cooking 1 and 2
• In-depth working knowledge of alcoholic and non-alcoholic beverages
• Working knowledge of food preparation and presentation
• Experience in staff management and development
• Practicable knowledge of financial accounting principles and practices including analyzing financial data and knowledge of planning and forecasting
• Able to use relevant computer applications
• Excellent written and verbal communication skills

Role Responsibilities:

Staff Mangement 
 • Lead and manage onsite catering team, ensuring provision of a high-quality catering service which meets the needs of the site and customers
• Develop, implement and monitor procedures to ensure compliance with health and safety, hygiene, food handling and alcohol regulations, including a safe working environment and compliance with Country Park security procedures
• Liaising with onsite Countryside team, explore and exploit new opportunities for additional business and income generation 
• Manage staff performance including training, coaching and regular staff briefings
• Promote team work to ensure an efficient operation, organize and monitor staff schedules
• Assess staffing requirements and recruit staff
 
Resource and budget management
 • Use approved suppliers to requisition supplies up to budget levels, obtaining best value
• Ensure stock levels are maintained to meet the needs of the business
• Analyze food and beverage costs and review / assign / recommend menu prices
• Ensure cash management procedures are completed accurately
• Monitor budgets, analyze budget variances and take corrective actions
• Establish and implement financial controls
• Develop the catering business plan of Royal Victoria Country Park
• Prepare and analyze management reports
• Ensure timely maintenance and repair of all equipment
 
Service planning, delivery and monitoring
• Work with Site team and HC3S to ensure compliance with food legislation and agreed local and sustainable agendas
• Identify/ introduce new initiatives to ensure a high quality, attractive food offer at all times
• Cost and plan all menus, including provision for special dietary needs
• Liaise with support teams to design, print and distribute menus and marketing material
• Handle cash and operate tills/vending machines/cashless card systems following strict guidelines
• Ensure compliance with changes in food standards, government initiatives and legislative changes
• Set operating goals and objectives, preparing and implementing standard operating procedures
 
Management of service areas
 • Provide service in line with the requirements of the site
• Prepare food following specified recipes, allergen legislation, is ready on time, at correct temperature and to the appropriate standard.
• Ensure food offer is on trend and appropriate
• Ensure staff are customer focused and have appropriate skills and knowledge to interact with customers
• Respond promptly and effectively to customer requests and complaints
 
Kitchen and restaurant hygiene
 • Ensure cleaning duties are completed to ensure health and safety and hygiene standards are maintained
• Ensure all corporate and statutory initiatives (equalities/health & safety/e-government /sustainability) are disseminated, understood and implemented
• Ensure all staff understand Hampshire County Council and countryside Services Policies and ensure compliance

 

Role Dimensions – Financial  and Non-financial units
• Daily Income over £1,000
• Complexity of the service may vary depending on site, style of service and client requirements
• Annual income target in line with trading days, based on £1,000 per day (e.g. between £190,000 to £750,000)
 

Main Contacts

Internal & External:

Working Conditions:

• Kitchen environment restaurant can be very hot, busy and noisy
 • Due to the nature of the operation, staff are sometimes required to work within a confirmed space which adds to additional pressure on team work requirements
 • Requirement of heavy manual work: lifting and carrying of heavy cooking equipment and deliveries. The job also involves continuous standing for prolonged periods
 • Due to pressures of the main service period (breakfast/lunch/dinner) staff are required to work at a consistently fast pace
